
Once you make this refreshing cordial you won't want regular cordial or soft-drinks again!
Ingredients
1 cup of citrus fruit juice. Limes and grapefruit were juiced but you can use any citrus fruit juice to your liking. Try to juice the fruit yourself.
1/3 cup of xylitol(natural birch sugar available at health food stores) or 1/2 cup sugar.
Heat the lime juice and sugar on a low heat in a saucepan until the liquid thickens to a light syrup.
Let it cool and then pour it into a glass bottle with a lid and keep it in the cupboard or fridge.
Serving suggestion:
Add 1 tablespoon of cordial to a 350ml glass and top with plain, sparkling, mineral water.
Stir and garnish with some citrus fruit slices.

100ml Lime curd see the recipe under jams and preserves
300ml whipping cream
grated lime zest for garnishing
Whip the cream in a deep dish until thick.
Gently fold in the lime curd.
Spoon into a small glass and garnish with the grated lime zest.
